Ingredients
  1. 1kg mussels
  2. 1 small garlic clove, finely chopped
  3. 1 shallots, finely chopped
  4. a bouquet garni of parsley, thyme and bay leaves
  5. 15g butter
  6. 75ml dry white wine or cider
  7. 100ml oz double cream
  8. handful of parsley leaves, coarsley chopped
  9. crusty bread, to serve
Instructions
  1. Soak the mussels in cold water and use a sharp knife to remove any bits of beard or barnacles (discarding any open ones that don't close when tapped)
  2. Add the butter, garlic, shallots and bouquet garni to a pan large enough to hold all the mussels
  3. Soften the garlic and shallots, being careful not to brown them
  4. Add the mussels and wine and turn up the heat
  5. Put the lid on the pan, give it a good shake and allow the mussels to steam for approx. 3-4 minutes
  6. Add the cream and chopped parsley and shake the pan again to distribute the flavours
  7. Spoon into a large bowl and serve with delicious crusty bread
