Paleo Chunky Monkey Muffins

You’re maybe looking at the ingredients of these muffins and thinking to yourself, how on earth can these be healthy. Well, all the ingredients are ‘paleo’ / ‘primal’ friendly so long as you can tolerate things like dairy products for example. All fats used are healthy fats that will benefit you when eaten as part of a low carb primal lifestyle. Go easy though, they are rich.

  1. 60g coconut flour (Asian grocery store e.g. Sals Halal in Portadown)
  2. 60g tapioca flour (Asian grocery store e.g. Sals Halal in Portadown)
  3. 1 teaspoon baking soda
  4. 115g butter, melted (Grass-fed is best e.g. Kerrygold)
  5. 100g coconut sugar/palm sugar (Asian grocery store e.g. Sals Halal in Portadown)
  6. 250g mashed bananas, from ~2 medium bananas
  7. 1 teaspoon vanilla extract
  8. 4 eggs
  9. 85g chocolate chips (at least 70% cocoa solids)
  10. 60g walnuts, chopped
  1. Preheat oven to 180°C
  2. Line a standard muffin tin with paper liners
  3. In a large bowl, whisk together coconut flour, tapioca flour, and baking soda
  4. In another large bowl, whisk together butter, sugar, bananas, vanilla extract, and eggs
  5. Whisk the dry ingredients into the wet ingredients
  6. Gently fold in the chocolate chips and walnuts
  7. Divide batter among the lined muffin cups
  8. Bake until the muffins have puffed and the edges have slightly browned, about 20-25 minutes
  9. Take out of muffin tin and allow to cool on a cooling rack
  10. ENJOY
  1. Walnuts could be replaced by hazelnuts if you prefer
